Finca La Pacaya is our award winning farm and the crown jewel in the MAVCOFFEE family. It was established as an exotic varietal farm where no expense nor variable would be left out in search of the highest quality coffee we can produce.

The farm has won three consecutive times at El Salvador's Cup of Excellence and a presidential award.

Quality

This isn’t your typical coffee plantation. We pride ourselves on using cutting edge technology and techniques to bring you the best and most consistent cup of gourmet coffee that we can make.

Our process for selecting the best beans begins with identifying internal sucrose levels, beans that score 25º on the Brix scale are handpicked according to their maturity. The beans are further filtered through sieves for size uniformity, floated in water to revalidate sucrose levels, and dried before being anaerobically fermented for 48 hours in barrels designed and manufactured by us.

The grains are subsequently dried in a greenhouse at a controlled and stable temperature of 30ºC ±5ºC. The temperature is checked every 30 minutes with an infrared thermometer and shaded if the dough temperature exceeds our parameters. The beans are dried to 10.5% moisture and packed into Grainpro bags for storage.

Finca la Pacaya is an oasis for exotic coffee Varieties. Its location between 1,750 and 2,000 meters above sea level, allowing us to find the optimal conditions for every variety.

Today the farm has several varieties making it one of the only farms in the country to serve top quality micro-lots from resilient varieties, harvested under the perfect conditions.

MAV founder went personally to acquire the seeds to Panama

In 2014, researching and tasting exotic varietals, we ended up in Panama, in search of the mythical Geisha variety. We started a friendship with the father of the Panamanian geisha Francisco Serracín who kindly sold us seeds to grow again in El Salvador.

The result was an identifiable traditional Panamanian geisha with a unique Salvadoran profile that perfectly accentuates the rich nutrients of the mountain

To make it happen, we duplicate the same techniques and technologies we learned and apply on our family farm, recording everything with obsessive attention to detail. In subsequent years, we select the most suitable and best tasting plants and symbiotically adapt them to the lush, misty and harsh but ideal environment of the farm.
