“This year our crop is a true survivor.” Says MAV, as he overlooks the collectors hard at work picking only the ripest of the ripest of our Finca San Antonio Sarchimor coffee. We take a moment to think back on the hard work our team has put through out the last months to make this happen . More importantly , we are focused on the work that lies ahead to bring this coffee to its maximum potential.

As you might know, this year El Salvador was unfortunately affected by several tropical storms and hurricane Julia. Beyond coffee, the weather really affected people housing and entire communities.
Even at the beginning of November as we started to cut, we have been struck by many rains. Forcing us to adapta and row with the weather.
Regardless of the damage, we want to simply be thankful and dedicate this crop to all Salvadorans spirit for always coming together and pushing through the hard times..
This year 2022 sure challenged us. We beginbelieve this 2022 will be the beginning of new relationships, new comercial bridges and piossibilities.
Once the cherries are picked, they are first floated to remove the unripe ones. They are then dried for two days to remove the excess of water. The coffee is then depulped without the use of water (depulped natural) before being dried on raised african beds, covered everyday after mid day.
